HOW TO STAY SAFE WHILE COOKING...

Cooking is your passion and you are always in the kitchen stirring up a storm.

Else you may be cooking for a more basic reason -- you need to eat.

Either way, kitchen safety is very important.
Unfortunately, your kitchen has three key ingredients required to start a fire: fuel, flame and air. "Besides fires, cooking hazards like hot oil splattering and steam are responsible for burns and scalding," says 26-year-old Bangalore hotel management graduate and hotelier Anuj Gemawat. Other culprits include gas leaks and malfunctioning of electrical equipments and cooking utensils.
Well, it's better to be safe than sorry. So, follow our guide and avoid any disasters in your kitchen.

What to wear:

Wear loose fitting clothes because they do not stick to the skin. No flowing garments like free-flowing dupattas or wraparound skirts. In case your clothes catch fire, take off your clothes immediately.

Preferably wear cotton, as it soaks oil splatters and does not stick to your body.

Avoid synthetic materials in the kitchen; if it catches fire it tends to stick to the body, causing harsh burns.

Basically wear clothes that breathe since the kitchen is a hot place and you should not feel hot and stuffy in your clothes. Also, avoid wearing a lot of jewellery; as metal retains heat and tends to get very

Kitchen safety tips

Never use the kitchen in a hurry. Always remain calm as haste leads to accidents.

Turn off the gas and regulators after use. Regularly check the gas, pipes and replace anything with the slightest wear and tear.

Keep a list of emergency numbers -- of neighbours, spouse and doctors -- handy, preferably in one area like on the front of the refrigerator. Inform everyone at home that it is there. The following emergency numbers are applicable all over India: Fire Brigade: 101Ambulance: 102Police: 100
Clean up spills immediately before someone slips and falls. Avoid using curtains in the kitchen. Avoid using extension cords, as wires strewn across the floor may cause someone to trip.
Switch off the gas before receiving a phone call or answering the doorbell.
When deep frying, place the saucepan/kadhai of hot oil on an inside gas burner (if you have a four-burner stove) so it cannot topple. If you have a two-burner stove, use a very stable cooking utensil for frying. And remove it from the gas and store safely as soon as you are done.

Pets and kids

Train your pets not to enter the kitchen. Pets get tangled in wires and drop gadgets in the kitchen or spill food. After completing your cooking, shut the kitchen door to prevent pets from entering.
Don't allow children to play in the kitchen. Keep matchboxes, lighters, hot oil and knives out of their reach.
Keep enticing food like sweets/chocolates away from the gas area, as your child may be tempted to climb to get it when you are not around.

Kitchen equipment:

1)Pressure cooker

"There are three main parts: the locking mechanism, the gasket and the pressure vent/seal," says Gemawat. If any of these items are not working properly (leaks or worn out), get it replaced/ repaired immediately. Never use a cooker that has exploded before. Get it replaced/ repaired at the earliest, as it can explode anytime again.

2)Other electrical equipment

Keep all your electrical equipments (except a fridge, of course), unplugged at all times when not in use like the microwave, mixer etc. This will avoid any accidental fires, sparks or short circuits.

During emergencies:

Fire:

First cut off the source of the flame (gas, stove or electric plug), then douse the fire with a fire extinguisher or a blanket. If it is not possible to get to the source and if the flame seems to be getting out of hand, evacuate the place as soon as possible and call the fire brigade and an ambulance.

Burns (minor/ major burns):

Dr Sailesh Mehta, a Mumbai based practitioner says, "Wipe the affected area with a clean damp cloth or else the wound will start hurting very badly. Then give the area an ice-rub and apply an antiseptic cream. Usually antiseptic creams have a cooling effect that help you to bear the pain and heal the wound."

Cuts and wounds:

"If the cut is deep, first hold up the affected part with your other hand so that the wound stops bleeding," says Dr Mehta. "Then put the affected part of your hand/ finger in a bowl of ice to arrest the bleeding completely." You can then administer first aid such as an antiseptic cream or band-aid.

Electrical shock:

Immediately isolate the source of the current with a non-conductive element like a wooden plank, rolling pin, wooden ladle or rubber gloves. "If you receive an electrical burn (from a toaster or a hot oven), then treat the affected part with cold water and ice compress," suggest Dr. Mehta.

Hot oil spluttering on the skin:

Mehta suggests, "Whenever hot food, water, or oil splutters on the skin, immediately put the affected area under a running tap. The idea is to cool off the skin as heat tends to damage skin tissue. Then give a cold compress and apply an antiseptic cream to soothe the pain."

Steam scalding:Immediately take the victim away from the source, under a fan and apply an ice pack in the affected area.

First-aid/fire-fighting kits:

"A kitchen should always have a first aid and a fire fighting kit, which must include a fire blanket and a fire extinguisher," says Gemawat. "Ensure that everyone knows the location of such items and how to use them. All these items must be kept in the open and be clearly visible to all," he says. Several buildings have fire-fighting devices such as fire extinguishers and water hoses installed in the passageways and kitchens.
"In case of a small fire you can cover it with a fire blanket as well as cover yourself/kids for protection while escaping, " says Kishor Handu from Citadel Security Systems in New Delhi, which specialises in fire safety products. However, it's a good idea to invest in a fire extinguisher, which can be classified into various types:
Class A: Fires involving wood, paper, cloth etc (solids)
Class B: Fires involving petroleum products etc (liquids)
Class C: Fires involving LPG, CNG gases etc (gasses)
Class ABC: Fires resulting from all three
"The ABC type extinguisher is the best choice as it beats any sort of fire as well as can be operated with ease even by a child," adds Handu. It costs about Rs 1,500 for 2 kg (model). A carbon dioxide fire extinguisher costs Rs 3,300 and is meant for electrical and kerosene related fires.

The Yellow Pages in your city/town has a list of companies, which provide fire safety products like fire extinguishers for home and office use.

How old is ... the cheese? A bit of history

According to most resources cheese was first made in the Middle East. The earliest type was a form of sour milk, which was discovered when domesticated animals were milked.

According to a legend, cheese was 'discovered' by an unknown Arab nomad. He is said to have filled a saddlebag with milk to sustain him on a journey across the desert by horse. After several hours riding he stopped to quench his thirst, only to find that the milk had separated into a pale watery liquid and solid white lumps. Because the saddlebag, which was made from the stomach of a young animal, contained a coagulating enzyme known as rennin, the milk had been effectively separated into curds and whey by the combination of the rennin, the hot sun and the galloping motions of the horse. The nomad, unconcerned with technical details, found the whey drinkable and the curds edible.

Cheese was known to the ancient Sumerians four thousand years before the birth of Christ. The ancient Greeks credited Aristaeus, a son of Apollo and Cyrene, with its discovery; it is mentioned in the Old Testament.

In the Roman era cheesemaking was done with skill and knowledge and reached a high standard. By this time the ripening process had been developed and it was known that various treatments and conditions under storage resulted in different flavours and characteristics. The larger Roman houses had a separate cheese kitchen, the caseale, and also special areas where cheese could be matured. In large towns home-made cheese could be taken to a special centre to be smoked. Cheese was served on the tables of the nobility and travelled to the far corners of the Roman Empire as a regular part of the rations of the legions.

During the Middle Ages, monks became innovators and developers and so contributed to the many classic varieties of cheese marketed today. During the Renaissance period cheese suffered a drop in popularity, being considered unhealthy, but it regained favour by the nineteenth century, the period that saw the start of the move from farm to factory production.

Critic's I-view

Blood splattering boxing bouts, heart warming emotions, whimper for true love and a fighting boxer! No this is no "Rocky" nor is he "Ali"; he is our very own local boy "Aryan" in the boxing ring. Sports oriented films are a rare breed in the tinsel town and there are just handfuls of them that have managed to swim against the tide. It's difficult genre to attempt and requires great sense of perseverance, skill and tenacity. The film was touted as one man's undying struggle towards his ambition but carrying the burden of never ending predictable melodrama. Unfortunately, the motivation for this die-hard ambition stems out from his shattered happy family dreams

Aryan's biggest asset is his will and strength for all non- cricketing sportsmen to rise above mediocrity and fight for supremacy in their respective arena. In this cricket loving country, sports like boxing never reach zenith nor does it produce champions of international standard. It could have been ground-breaking success if the treatment and scripting had authenticated the theme but it was lost in glossy sheen of discos and tear jerking emotional melodrama. The other plus point of the film is to project growing drug abuse in the present day sporting world but poor characterization makes it dim and shoddy.

It's a noble idea to make sports based films but nothing has been glorified on sportsmanship, displayed sports or its technique. The director was busy in alluring urban audiences through flashy and glossy disco tracks with couple of melodious numbers. The last half hour provides welcome relief as the film gets back on its track but the first half is downer

Abhishek Kapoor (nephew of Jeetendra) shifts territory from acting to direction and makes first blood on the silver screen with this film. He started off unimpressively in least heard 'Uff Yeh Mohaabat' followed by a couple of B-grade releases. He deserves appreciation for being bold and to some extent innovative but shows signs of naivety in his story narration. The characterizations are weak and semi-baked; screenplay shows signs of predictability, acting department is simply average but the film's strength lies in boxing action sequences and musical soundtracks (big surprise!).

Hollywood evergreen blockbuster 'Rocky' happens to be an inspirational lift for this action packed thriller. In 80's there were films made on a similar theme but were rejected by audiences. Mithun Chakraborty showed nerves of steel in 'Boxer' followed by he-man Dharmendra's action packed revenge saga 'Main Intequam Loonga'. Thereafter the concept never materialized and the "killer instinct" in sports field never got any stronghold in the film industry. Hollywood still holds love and interest in such films as in 'Million Dollar Baby' and 'Ali'.

Now, the scenario shifts to 'Aryan -Unbreakable', the much delayed film with a sub-standard face value and melodious music clubbed with unwanted controversy. The film entered into trouble waters when "Viva" girl Neha Bhasin turned hostile on filmmakers on the soundtrack "Ek Look Ek Look".

Sohail Khan plays the tough and determined character of "Aryan" but the toughness is under wrap in the veils of adolescent love. It finally blows out when the marital bliss proves a disaster and his lady love turns tougher to make him a fighter. Sneha Ullal makes second big presence on screen as his love interest and comes out in more matured attire than her debut performance

'Aryan' triggers off in boxing arena where Aryan (Sohail Khan) is coached by strict disciplinarian boxing coach Ranveer Singh (Puneet Issar). Neha (Sneha Ullal), cherubic and lovable girl, is Aryan's love interest. Ranjit Singh (Inder Kumar) joins the boxing club and befriends Aryan and others. Neha has over-possessive mother (Supriya Karnik) who wants her to marry a rich green card holder. On the contrary, she has the support of extra caring and loving father (Satish Shah), who helps her in all walks of her life. Neha is head over heels in love with Aryan but her mother resents this relationship. Ranveer Singh also shows his disgust over this relationship and wants Aryan to concentrate on boxing. The story takes turn as Neha gets pregnant. Aryan's life hangs between his boxing career and marriage promise to Neha. Aryan chooses his lady love Neha over his passion for boxing.

Those were the days when Kandhar was part of India and it was in the Mahabharat era that Kandhar was very closely related to Indraprastha (Delhi). Gandhari, the princess, had married Dhritrashtra but all those days of gaiety and galaxy have perished with the time. Now, when one thinks of Afghanistan, images of destroyed Buddha in Bahmian come straight in front of our eyes. A country destroyed by the struggle between the local government there and Taliban mercenaries is trying it hard to come to its own once again with the help of India and other countries. What Pakistan has done to Afghanistan is an example for the world and a lesson for others.

When Mukul Anand went to shoot 'Khuda Gawah' in Afghanistan, he was given full protection by the country's royal army. Amitabh Bachchan was treated almost like head of a state, but debutant director Kabir Khan got nothing like this, this time. A prolific documentary filmmaker turns to film direction with a film that defies the norms and trends of Hindi Cinema. No man would dare think of going to this neighboring country and shoot the film, but Kabir has done it, and he should get appreciation for this. Not only he but actors like John Abraham and Arshad Warsi risked their lives too. This is despite the fact that they had plenty of offers back in India to do easy films. However, this is the new generation of Indian Cinema, please sit back and let the world watch new face of Hindi Cinema.

'Kabul Express' is a look from the perspective of two TV journalists of a country that is reeling under fear and destruction post 9/11. The story is told with the help of two journalists Jai (Arshad Warsi) and Suhel (John Abraham). These two have reached Afghanistan in their zeal to find something exclusive and this search for exclusive lands them into the biggest trouble of their life. Suhel and Jai want to interview some Taliban that will make their career go a long way, but downhill Afghanistan something else is laid for them. They hire a local guide Khyber (Hanif Hum Ghum) who also doubles up as their cab driver.

The cab named Kabul Express travels in the gun-trotting areas of Afghanistan ; the deeper they go, severer it gets for them. On thier way they happen to witness famous game of locales -- Buzkashi and it is here that they meet an American journalist Jessica (Linda Arsenio). She saves them from a big problem. All the people come to know about their aims and Jessica thinks that if she follows these two, maybe she could also get some exclusive news. One fine morning Jai and Suhel are kidnapped and are taken to an unknown destination. Jessica follows them thinking that these two are on the way to their story but lesser does she know that she is heading for death. During this life-risking voyage, they chance to meet upon a Pakistani soldier Imran (Salman Shahid), who has been working for Taliban but wishes to go back to his family. A search for the story becomes a fight to make Imran reach his home.

Yashraj Films that has tasted commercial success this year in 'Fanaa' and 'Dhoom 2' has come with a film that is more thoughtful than the earlier two. While 'Fana' and 'Dhoom 2' were targeted at masses, 'Kabul Express' is meant for classes. Because of the rift between Yashraj Films and multiplex owners of India, the film has not been released in many multiplexes, and the rift that switched in favor of Yashraj on earlier two occasions, has gone against it this time

'Kabul Express' is a marvelous film for those who want to see more than smooching of Hrithik and Aishwarya and who have the zeal to watch a film that is more of an international level. Kabir Khan has given this gem to Yashraj Films that will be a shining diamond in their catalogue. Kabir has shown what it takes to make a different film. The storyline is good. The ambience is just perfect and the making at par with any Hollywood film. 'Kabul Express' has one of the best technical finesse in Hindi films this year.

Among actors, Arshad Warsi proves that he can do more than just be a sidekick of Munna Bhai. He shows that it is not his loss if he is not getting better roles but it is the loss of Hindi film industry . Arshad has proved it earlier in films like 'Seher' and now in 'Kabul Express', the people in the industry may once again take note of his caliber. John Abraham has second film at box office after 'Baabul' in quick succession, and he tries his best to catch on with this opportunity

He failed in 'Baabul' but in 'Kabul Express' he excels and shows that he is more than just a macho man flirting with gorgeous girls. This film can help him change his image from a Casanova to a serious actor. VALENTINES DAY HISTORY

As early as the fourth century B.C., the Romans engaged in an annual young man's rite to passage to the God Lupercus. The names of the teenage women were placed in a box and drawn at random by adolescent men; thus, a man was assigned a woman companion for the duration of the year, after which another lottery was staged. After eight hundred years of this cruel practice, the early church fathers sought to end this practice... They found an answer in Valentine, a bishop who had been martyred some two hundred years earlier.

According to church tradition St. Valentine was a priest near Rome in about the year 270 A.D. At that time the Roman Emperor Claudius-II who had issued an edict forbidding marriage.

This was around when the heyday of Roman empire had almost come to an end. Lack of quality administrators led to frequent civil strife. Learning declined, taxation increased, and trade slumped to a low, precarious level. And the Gauls, Slavs, Huns, Turks and Mongolians from Northern Europe and Asian increased their pressure on the empire's boundaries. The empire was grown too large to be shielded from external aggression and internal chaos with existing forces. Thus more of capable men were required to be recruited as soldiers and officers. When Claudius became the emperor, he felt that married men were more emotionally attached to their families, and thus, will not make good soldiers. So to assure quality soldiers, he banned marriage. Valentine, a bishop , seeing the trauma of young lovers, met them in a secret place, and joined them in the sacrament of matrimony. Claudius learned of this "friend of lovers," and had him arrested. The emperor, impressed with the young priest's dignity and conviction, attempted to convert him to the roman gods, to save him from certain execution. Valentine refused to recognize Roman Gods and even attempted to convert the emperor, knowing the consequences fully. On February 24, 270, Valentine was executed.

While Valentine was in prison awaiting his fate, he came in contact with his jailor, Asterius. The jailor had a blind daughter. Asterius requested him to heal his daughter. Through his faith he miraculously restored the sight of Asterius' daughter. Just before his execution, he asked for a pen and paper from his jailor, and signed a farewell message to her "From Your Valentine," a phrase that lived ever after.

Valentine thus become a Patron Saint, and spiritual overseer of an annual festival. The festival involved young Romans offering women they admired, and wished to court, handwritten greetings of affection on February 14. The greeting cards acquired St.Valentine's name.

The Valentine's Day card spread with Christianity, and is now celebrated all over the world. One of the earliest card was sent in 1415 by Charles, duke of Orleans, to his wife while he was a prisoner in the Tower of London. The card is now preserved in the British Museum.
